Besan ladoo is the sweet that makes every Diwali feel like home. It needs only a few ingredients, and the flavour comes from slow roasting in good ghee.

Ingredients

  • 1 cup besanCoarse gram flour
  • 1/3 cup desi gheePure and fresh
  • 1/2 cup powdered sugarAdjust to taste
  • 1/2 tsp cardamom powderFor aroma
  • 2 tbsp chopped nutsAlmonds or cashews

Method

  1. Melt the ghee

Heat the ghee in a heavy pan on a low flame.

  2. Roast the besan

Add the besan and roast for 12 to 15 minutes, stirring all the time, until it turns golden and smells nutty.

  3. Cool it down

Switch off the flame and let the mixture cool for about 10 minutes. It should stay warm, not hot.

  4. Mix it in

Add the sugar, cardamom and chopped nuts. Mix well.

  5. Shape the ladoos

While the mixture is still warm, press small portions into round ladoos.

  6. Let them set

Rest for 30 minutes, then store in an airtight box.

Tips for perfect ladoos

  • Roast slowly. Rushing on high heat gives a raw taste.
  • Add sugar only after the mixture cools a little, or the ladoos turn hard.
  • Add a spoon of ghee if the mixture feels dry while shaping.
