Dry Fruit Ladoo
Dry fruit ladoo is a festive sweet that needs no sugar syrup. Dates and a little ghee bind the nuts together, and the whole thing comes together in about 25 minutes.
Ingredients
- 1/2 cup almondsWhole, unsalted
- 1/2 cup cashewsWhole, unsalted
- 1/4 cup walnutsOptional
- 2 tbsp raisinsSeedless
- 1 cup seedless datesAbout 15, soft
- 2 tbsp desi gheeFor roasting and binding
- 1/2 tsp cardamom powderFor aroma
Method
Roast the nuts
Dry roast the almonds, cashews and walnuts on a low flame for 5 to 6 minutes, until they smell nutty. Let them cool.
Chop them coarsely
Pulse the cooled nuts in a grinder for a few seconds. Keep them coarse, not powdery.
Soften the dates
Heat 1 tablespoon of ghee in a pan. Add the chopped dates and cook for 3 to 4 minutes, mashing, until they turn into a soft paste.
Mix everything
Add the nuts, raisins and cardamom to the dates. Mix well while the mixture is still warm.
Shape the ladoos
Rub a little ghee on your palms and roll small portions into round ladoos.
Let them set
Rest for 15 minutes, then store in an airtight box.
Tips for perfect ladoos
- Use soft dates. If they feel hard, soak them in warm water for 10 minutes and drain well.
- Shape the ladoos while the mixture is warm, or they will not hold together.
- Keep the nuts coarse for a better bite.
